These no-bake butterscotch crunchies are made with crispy cereal, melted butterscotch chips, and peanut butter for a quick and tasty dessert or snack!

- 1 (11-ounce) bag butterscotch chips
- 1/2 cup creamy peanut butter
- 3 cups cornflakes (or crispy chow mein noodles)
- 1/2 teaspoon vanilla extract (optional)
- Pinch of salt
Instructions
- Melt butterscotch chips and peanut butter: In a microwave-safe bowl, melt the butterscotch chips and peanut butter together in 30-second intervals, stirring after each until smooth. (Alternatively, melt in a saucepan over low heat.)
- Add vanilla and salt (if using), then stir in the cornflakes or chow mein noodles until fully coated.
- Drop spoonfuls of the mixture onto a parchment-lined baking sheet.
- Let set: Allow the crunchies to cool and harden at room temperature (about 30 minutes) or place them in the fridge for quicker setting.
- Enjoy! Store in an airtight container at room temperature or in the fridge.
Notes
- Use Rice Krispies instead of cornflakes for a different crunch.
- Add ½ cup chopped nuts or mini marshmallows for extra texture.
- Melted chocolate can be drizzled on top for extra sweetness!
