These tender, buttery lobster tails are gently poached in a rich garlic-infused butter sauce, making them incredibly flavorful and juicy. Perfect for a special occasion or an elegant dinner!
Ingredients

- 2 lobster tails (4–6 oz each)
- 1 cup unsalted butter (2 sticks)
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper (or black pepper)
- 1 teaspoon paprika (for color, optional)
- 1 tablespoon fresh chives or parsley, chopped (for garnish)
Instructions
Prepare the Lobster Tails:
- Using kitchen shears, cut down the top of the lobster shell, stopping at the tail fin.
- Gently pull the lobster meat out and rest it on top of the shell (but keep it attached at the base).
Make the Butter Poaching Liquid:
- In a small saucepan, melt butter over low heat. Add garlic, lemon juice, salt, white pepper, and paprika.
- Keep the butter at low heat (around 160–180°F, never boiling) to create a smooth, velvety poaching liquid.
Poach the Lobster:
- Place the lobster tails into the warm butter, making sure they’re fully submerged.
- Poach gently for 5–7 minutes, basting occasionally, until the lobster is opaque and tender.
Serve & Enjoy!
- Remove the lobster tails and plate them with extra butter sauce drizzled on top.
Notes
Don’t overheat the butter! Keep it below boiling to prevent separating.
Serve with steamed asparagus, mashed potatoes, or garlic bread for a complete meal.
For an extra luxurious touch, add a splash of white wine to the butter sauce.
