Description

These adorable Bunny Bundt Cakes are the perfect Easter treat! Made with a moist and fluffy cake, they’re shaped like cute bunnies and decorated with pastel-colored glaze, coconut “fur,” or sprinkles. Ingredients

For the Cakes:

1 box white or vanilla cake mix (plus ingredients listed on the box – eggs, oil, water)

1 teaspoon vanilla or almond extract (optional, for extra flavor)

1/2 teaspoon cinnamon (optional, for a warm touch)

For the Glaze:

2 cups powdered sugar

34 tablespoons milk or heavy cream

1 teaspoon vanilla extract

Food coloring (pastel pink, blue, yellow, green)

For Decoration:

Shredded coconut (optional, for a furry effect)

Mini marshmallows (for bunny tails)

Easter sprinkles or sugar pearls

Pink sanding sugar (for bunny ears, optional)

White chocolate chips (for eyes, optional)


Instructions

  1. Bake the Mini Bundt Cakes:

    • Preheat the oven to 350°F (175°C).
    • Grease a mini bundt cake pan well with nonstick spray or butter.
    • Prepare the cake batter according to the box instructions, adding vanilla or almond extract if using.
    • Pour the batter into the mini bundt molds, filling each about ¾ full.
    • Bake for 18–22 minutes or until a toothpick inserted comes out clean.
    • Let the cakes cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
  2. Make the Glaze:

    • In a bowl, whisk together powdered sugar, milk (or cream), and vanilla extract until smooth.
    • Divide into separate bowls and tint each with different pastel food colors.
  3. Decorate the Bunny Bundt Cakes:

    • Drizzle or dip each bundt cake in the pastel glaze.
    • Sprinkle shredded coconut on top if you want a “fluffy bunny” look.
    • Attach a mini marshmallow to the back of each cake as a bunny tail.
    • Use white chocolate chips or candy eyes for the bunny’s face (if desired).
    • Add pink sanding sugar or sprinkles to make bunny ears (optional).
  4. Set and Serve:

    • Allow the glaze to set for about 30 minutes before serving.

Notes

If you don’t have a mini bundt pan, use a regular cupcake pan for bunny-shaped cupcakes instead!

You can also use a homemade vanilla or pound cake recipe instead of cake mix.

For a richer glaze, substitute some of the milk with melted white chocolate.

To make bunny ears, cut marshmallows diagonally and dip the sticky side in pink sugar.
