Description

These Buffalo Chicken Bombs are the perfect mix of spicy, cheesy, and crispy! Shredded buffalo chicken, cream cheese, and cheddar are wrapped in soft biscuit dough, then baked until golden brown. Great for game days, parties, or an easy appetizer!


Ingredients

  • 2 cups cooked, shredded chicken
  • 1/2 cup buffalo sauce (like Frank’s RedHot)
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tube (8-count) refrigerated biscuit dough (like Pillsbury Grands)
  • 2 tbsp melted butter
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 cup chopped green onions (optional, for garnish)
  • Ranch or blue cheese dressing, for dipping

Instructions

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

Make the filling: In a bowl, mix shredded chicken, buffalo sauce, cream cheese, cheddar, and mozzarella until well combined.

Prepare the dough: Flatten each biscuit into a 4-inch circle.

Fill & seal: Place 1-2 tbsp of the buffalo chicken mixture in the center of each dough circle. Fold the edges up and pinch to seal, forming a ball.

Season & bake: Place the bombs seam-side down on the baking sheet. Brush with melted butter, then sprinkle garlic powder and onion powder on top.

Bake for 15-18 minutes, or until golden brown.

Serve: Garnish with chopped green onions and serve warm with ranch or blue cheese dressing.


Notes

  • For extra crispiness, air-fry at 375°F for 10-12 minutes.
  • Swap biscuit dough for crescent roll dough or pizza dough if desired.
  • Adjust buffalo sauce to taste—add more for extra heat!
