For the Chicken:
- 2 boneless, skinless chicken breasts

- 2 cups cherry tomatoes, diced
- 2 tbsp fresh basil, chopped
- 2 cloves garlic, minced
- 1 tbsp balsamic vinegar
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
For the Pasta:
- 8 oz pasta (penne, spaghetti, or fettuccine)
- 2 tbsp butter or olive oil
- 1/4 cup grated Parmesan cheese
- 1/2 cup balsamic glaze (for drizzling)
Instructions
- Cook the pasta – Bring a large pot of salted water to a boil and cook pasta according to package instructions. Drain and toss with butter or olive oil.
- Prepare the bruschetta topping – In a bowl, mix diced tomatoes, basil, garlic, balsamic vinegar, olive oil, salt, and pepper. Set aside.
- Cook the chicken – Heat 1 tbsp olive oil in a skillet over medium-high heat. Season chicken with Italian seasoning, salt, pepper, and garlic powder. Cook for 4-5 minutes per side, or until golden brown and cooked through (internal temp 165°F). Let rest, then slice.
- Assemble the dish – Toss the cooked pasta with grated Parmesan, then divide onto plates. Top with sliced chicken and spoon over the bruschetta topping.
- Drizzle with balsamic glaze – Garnish with extra basil and more Parmesan, if desired. Enjoy!
