Description

These Brownie Cookies are ultra chocolatey, soft, and chewy, with crinkly tops and a fudgy center. They’re the perfect cross between a brownie and a cookie—best enjoyed with a glass of milk!


Ingredients

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup semi-sweet chocolate chips (or chopped dark chocolate)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 cup cocoa powder (unsweetened)
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup additional chocolate chips (optional, for extra chocolatey bites)

Instructions

Step 1: Melt the Chocolate
  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a heatproof bowl, melt the butter and 1 cup chocolate chips together over a double boiler or in the microwave (stir every 20 seconds until smooth). Set aside to cool slightly.
Step 2: Make the Batter
  1. In a bowl, whisk granulated sugar, brown sugar, eggs, and vanilla extract until pale and creamy (about 2 minutes).
  2. Add the melted chocolate mixture and mix until combined.
Step 3: Add Dry Ingredients
  1. In another bowl, whisk together flour, cocoa powder, baking powder, and salt.
  2. Gently fold the dry ingredients into the wet mixture until just combined.
  3. Stir in extra chocolate chips (if using).
Step 4: Bake the Cookies
  1. Scoop about 1.5 tbsp of dough onto the prepared baking sheet, spacing them 2 inches apart.
  2. Bake for 10-12 minutes, until the edges are set but the centers are still soft.
  3. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Step 5: Serve & Enjoy!
