Ingredients

12 oz pasta (elbow, penne, or shells work great)

4 cups broccoli florets, chopped

2 tablespoons butter

2 tablespoons all-purpose flour

2 cups milk (whole or 2%)

1 1/2 cups shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

Optional: garlic powder or a pinch of red pepper flakes
Instructions

Cook pasta according to package directions. Add broccoli to the pot during the last 2–3 minutes of cooking. Drain and set aside.

In a large skillet or saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute to form a roux.

Slowly pour in the milk, whisking constantly to avoid lumps. Cook for 4–5 minutes until thickened.

Stir in cheddar and Parmesan cheese. Mix until melted and smooth.

Add cooked pasta and broccoli to the cheese sauce. Toss to combine and coat evenly.
