Description

These Breakfast Rolls are soft, buttery rolls stuffed with scrambled eggs, crispy bacon, sausage, and melted cheese. They’re easy to make and great for meal prep! Whether you use store-bought crescent dough or homemade biscuit dough, these rolls will be a family favorite.


Ingredients

For the Dough (Choose One):

  • 1 can (8 oz) refrigerated crescent roll dough or
  • 1 can (16 oz) refrigerated biscuit dough or
  • 1 batch homemade pizza or brioche dough

For the Filling:

  • 6 large eggs
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp butter
  • 6 slices bacon, cooked and crumbled or 6 breakfast sausage links, cooked and crumbled
  • 1 cup shredded cheddar cheese (or mozzarella, Swiss, or pepper jack)

For the Buttery Topping:

  • 3 tbsp unsalted butter, melted
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried parsley
  • 1/4 tsp smoked paprika (optional)

Instructions

Step 1: Make the Scrambled Eggs

  1. In a bowl, whisk together eggs, milk, salt, and pepper.
  2. Melt butter in a skillet over medium heat. Pour in the eggs and scramble until just set.
  3. Remove from heat and set aside.

Step 2: Prepare the Dough

  1. Preheat oven to 375°F (190°C) and grease a baking dish or line a baking sheet with parchment paper.
  2. If using crescent roll dough, separate into triangles. If using biscuit dough, flatten each piece slightly.

Step 3: Fill & Roll

  1. Place a spoonful of scrambled eggs, crumbled bacon or sausage, and shredded cheese onto each piece of dough.
  2. Roll up tightly, tucking in the sides if needed. Place seam-side down on the baking sheet.

Step 4: Add the Buttery Topping

  1. In a small bowl, mix melted butter, garlic powder, onion powder, parsley, and smoked paprika.
  2. Brush the mixture over the rolls before baking.

Step 5: Bake & Serve

  1. Bake for 12-15 minutes (crescent dough) or 15-18 minutes (biscuit dough), until golden brown.
  2. Let cool for a few minutes, then serve warm!

Notes

  • Make It Spicy: Add diced jalapeños or a dash of hot sauce to the eggs.
  • Cheese Options: Swap cheddar for Swiss, Monterey Jack, or American cheese.
  • Make Ahead: Assemble the rolls the night before, then bake in the morning.
  • Storage: Keep leftovers in the fridge for up to 3 days or freeze for up to 2 months.
