Description

A sweet and savory breakfast treat featuring sausage wrapped in golden pancakes or crescent dough. Serve with syrup for dipping!

Ingredients

Units Scale

For the Pancake Version:

  • 1 cup pancake mix (or homemade pancake batter)
  • 3/4 cup milk
  • 1 large egg
  • 1/2 teaspoon vanilla extract (optional)
  • 8 breakfast sausage links (fully cooked)
  • 1 tablespoon butter (for cooking)

For the Crescent Roll Version:

  • 1 (8 oz) can refrigerated crescent roll dough
  • 8 breakfast sausage links (fully cooked)
  • 1 tablespoon butter, melted (for brushing)
  • 1 tablespoon maple syrup (for brushing, optional)

For Serving:

  • Maple syrup (for dipping)
  • Powdered sugar (optional)

Instructions

1. Prepare the Sausage:

  1. If using raw sausage links, cook them in a skillet over medium heat until browned and fully cooked (about 8 minutes). Drain on paper towels.

2. Pancake Version:

  1. In a bowl, whisk together pancake mix, milk, egg, and vanilla until smooth. Let sit for 5 minutes.
  2. Heat a nonstick skillet or griddle over medium heat and lightly grease with butter.
  3. Dip each sausage link into the pancake batter, coating evenly.
  4. Cook for 2-3 minutes per side until golden brown and cooked through. Remove and set aside.

3. Crescent Roll Version:

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Unroll crescent dough and cut into 8 triangles.
  3. Wrap each sausage with a triangle of dough, starting at the wide end and rolling toward the point.
  4. Place on the baking sheet, seam side down. Brush with melted butter (or maple syrup for extra flavor).
  5. Bake for 12-15 minutes, or until golden brown.

4. Serve & Enjoy:

  1. Serve warm with maple syrup for dipping.
  2. Sprinkle with powdered sugar for extra sweetness (optional).

Notes

  • Make it cheesy! Add a slice of cheddar or American cheese before wrapping the sausage.
  • Use turkey or veggie sausage for a lighter option.
  • No crescent dough? Use biscuit dough or puff pastry instead.
  • Make it ahead: Cooked pigs in a blanket can be stored in the fridge for 2-3 days and reheated in the oven.
