For the Pancake Version:
- 1 cup pancake mix (or homemade pancake batter)
- 3/4 cup milk
- 1 large egg
- 1/2 teaspoon vanilla extract (optional)
- 8 breakfast sausage links (fully cooked)

For the Crescent Roll Version:
- 1 (8 oz) can refrigerated crescent roll dough
- 8 breakfast sausage links (fully cooked)
- 1 tablespoon butter, melted (for brushing)
- 1 tablespoon maple syrup (for brushing, optional)
For Serving:
- Maple syrup (for dipping)
- Powdered sugar (optional)
Instructions
1. Prepare the Sausage:
- If using raw sausage links, cook them in a skillet over medium heat until browned and fully cooked (about 8 minutes). Drain on paper towels.
2. Pancake Version:
- In a bowl, whisk together pancake mix, milk, egg, and vanilla until smooth. Let sit for 5 minutes.
- Heat a nonstick skillet or griddle over medium heat and lightly grease with butter.
- Dip each sausage link into the pancake batter, coating evenly.
- Cook for 2-3 minutes per side until golden brown and cooked through. Remove and set aside.
3. Crescent Roll Version:
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Unroll crescent dough and cut into 8 triangles.
- Wrap each sausage with a triangle of dough, starting at the wide end and rolling toward the point.
- Place on the baking sheet, seam side down. Brush with melted butter (or maple syrup for extra flavor).
- Bake for 12-15 minutes, or until golden brown.
4. Serve & Enjoy:
- Serve warm with maple syrup for dipping.
- Sprinkle with powdered sugar for extra sweetness (optional).
Notes
- Make it cheesy! Add a slice of cheddar or American cheese before wrapping the sausage.
- Use turkey or veggie sausage for a lighter option.
- No crescent dough? Use biscuit dough or puff pastry instead.
- Make it ahead: Cooked pigs in a blanket can be stored in the fridge for 2-3 days and reheated in the oven.
