1. Make-Ahead Egg Muffins

Fluffy, protein-packed egg muffins loaded with veggies and cheese.

Ingredients:

 

  • 8 large eggs
  • 1/2 cup milk (any kind)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 1/2 cup bell peppers, diced
  • 1/2 cup spinach, chopped
  • 1/4 cup onions, diced
  • 1/4 cup cooked bacon or sausage (optional)

Instructions

  • Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin.
  • In a large bowl, whisk eggs, milk, salt, and pepper.
  • Stir in cheese, bell peppers, spinach, onions, and cooked meat (if using).
  • Pour the mixture into the muffin tin, filling each about ¾ full.
  • Bake for 18-20 minutes, or until eggs are set.
