Description

A buttery crust, juicy blueberry filling, and a golden oat crumble topping—these blueberry pie bars are an easy and delicious dessert!

For the Crust & Crumble:

  • 1 1/2 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 1/2 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 3/4 cup unsalted butter, melted

For the Blueberry Filling:

 

  • 2 cups fresh or frozen blueberries
  • 1/3 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract

Instructions

Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.

Make the crust & crumble: In a bowl, mix flour, oats, brown sugar, cinnamon, and salt. Stir in melted butter until crumbly.

Press half of the mixture firmly into the bottom of the baking dish to form the crust. Bake for 10 minutes.

Make the filling: In another bowl, toss blueberries with sugar, cornstarch, lemon juice, and vanilla.

Spread blueberry filling evenly over the baked crust.

Sprinkle the remaining oat mixture over the top.

Bake for 30-35 minutes, or until the topping is golden brown and blueberries are bubbling.

Let cool completely before slicing into bars.


Notes

  • Store leftovers in an airtight container at room temperature for 2 days, or refrigerate for up to 5 days.
  • To make it gluten-free, use gluten-free flour and oats.
  • For a healthier version, replace half the butter with unsweetened applesauce.
