- 2 cups cooked chicken, shredded or diced
- 6 slices bacon, cooked and crumbled
- 1 cup cherry tomatoes, halved
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt (or sour cream)
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper, to taste
- 1/4 cup green onions or chives, chopped
- 1/2 cup romaine or iceberg lettuce, chopped
Instructions
- Prepare the chicken – If not already cooked, grill, bake, or poach the chicken, then let it cool and shred or dice it.
- Cook the bacon – Fry bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble once cooled.
- Mix the dressing – In a large bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, Dijon mustard, garlic powder, onion powder, salt, and pepper.
- Assemble the salad – Add the cooked chicken, crumbled bacon, cherry tomatoes, green onions, and chopped lettuce to the bowl with the dressing. Stir until everything is well coated.
- Chill and serve – Refrigerate for at least 30 minutes to let the flavors meld. Serve in lettuce cups, as a sandwich filling, or with crackers.
