Description

This BLT Chicken Salad combines the flavors of a classic BLT sandwich with tender, juicy chicken for a protein-packed, flavorful meal. It’s creamy, crunchy, and smoky, perfect for sandwiches, wraps, or enjoying on its own.

  • 2 cups cooked chicken, shredded or diced
  • 6 slices bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt (or sour cream)
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper, to taste
  • 1/4 cup green onions or chives, chopped
  • 1/2 cup romaine or iceberg lettuce, chopped

Instructions

  • Prepare the chicken – If not already cooked, grill, bake, or poach the chicken, then let it cool and shred or dice it.
  • Cook the bacon – Fry bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble once cooled.
  • Mix the dressing – In a large bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, Dijon mustard, garlic powder, onion powder, salt, and pepper.
  • Assemble the salad – Add the cooked chicken, crumbled bacon, cherry tomatoes, green onions, and chopped lettuce to the bowl with the dressing. Stir until everything is well coated.
  • Chill and serve – Refrigerate for at least 30 minutes to let the flavors meld. Serve in lettuce cups, as a sandwich filling, or with crackers.

Notes

  • Swap Greek yogurt for all mayonnaise if you want a lighter version.
