- 6 large flour tortillas
- 2 cups shredded Mexican blend cheese
- 1 cup cooked shredded chicken (or ground beef)
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn kernels
- 1/4 cup diced red bell pepper
- 1/4 cup chopped green onions
- 1 teaspoon taco seasoning
- 2 tablespoons butter, melted
For Dipping:
- 1/2 cup sour cream
- 1/2 cup salsa or guacamole
Instructions
- Preheat Oven:
- Preheat your oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
- Prepare the Filling:
- In a bowl, mix shredded chicken, black beans, corn, bell pepper, green onions, taco seasoning, and cheese.
- Assemble the Quesadillas:
- Cut each tortilla in half.
- Place about 2 tablespoons of filling on each half and fold into a triangle.
- Arrange the Ring:
- On the prepared baking sheet, arrange the filled tortilla triangles in a circular shape with the points facing outward, slightly overlapping.
- Brush the tops with melted butter.
- Bake & Serve:
- Bake for 15–18 minutes until golden and crispy.
- Place a small bowl of sour cream or salsa in the center for dipping.
- Serve warm and enjoy!
