Description

A fun and cheesy pull-apart appetizer made with crispy, golden quesadilla wedges arranged in a blooming ring. Perfect for parties and game nights!


Ingredients

  • 6 large flour tortillas
  • 2 cups shredded Mexican blend cheese
  • 1 cup cooked shredded chicken (or ground beef)
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1/4 cup diced red bell pepper
  • 1/4 cup chopped green onions
  • 1 teaspoon taco seasoning
  • 2 tablespoons butter, melted

For Dipping:

  • 1/2 cup sour cream
  • 1/2 cup salsa or guacamole

Instructions

  • Preheat Oven:
    • Preheat your oven to 375°F (190°C).
    • Line a baking sheet with parchment paper.
  • Prepare the Filling:
    • In a bowl, mix shredded chicken, black beans, corn, bell pepper, green onions, taco seasoning, and cheese.
  • Assemble the Quesadillas:
    • Cut each tortilla in half.
    • Place about 2 tablespoons of filling on each half and fold into a triangle.
  • Arrange the Ring:
    • On the prepared baking sheet, arrange the filled tortilla triangles in a circular shape with the points facing outward, slightly overlapping.
    • Brush the tops with melted butter.
  • Bake & Serve:
    • Bake for 15–18 minutes until golden and crispy.
    • Place a small bowl of sour cream or salsa in the center for dipping.
    • Serve warm and enjoy!
