- 2 tbsp avocado oil (or vegetable oil)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/4 cup sweet chili sauce
- 1 tbsp soy sauce
- 1 tbsp honey (optional, for extra glaze)
- 1 tsp sriracha (optional, for extra spice)
- 2 green onions, chopped
- 1 tbsp sesame seeds (for garnish)
- Lime wedges (for serving)

Preheat the Blackstone Griddle
- Heat your Blackstone griddle to medium-high heat (about 400°F).
- Lightly coat the surface with avocado oil or another high-heat oil.

Season the Shrimp
- In a bowl, toss the shrimp with salt, pepper, garlic powder, and smoked paprika.

Cook the Shrimp
- Place the shrimp on the hot griddle and cook for 2-3 minutes per side, until they turn pink and slightly charred.

Add the Sauce
- Reduce the heat to medium and pour the sweet chili sauce, soy sauce, honey, and sriracha over the shrimp.
- Toss to coat and cook for 1-2 more minutes, allowing the sauce to caramelize.

Notes
- Use fresh or frozen shrimp—just make sure frozen shrimp are fully thawed and patted dry before cooking.
- For extra crunch, serve with crushed peanuts or crispy fried shallots.
- Adjust spice level by adding more or less sriracha.
