Ingredients

Units Scale

For the Crust:

  • 1 can (16 oz) refrigerated biscuit dough (like Pillsbury Grands)
  • 2 tbsp melted butter (for brushing)

For the Sausage Gravy:

  • 1 lb breakfast sausage (pork or turkey)
  • 2 tbsp butter
  • 1/4 cup all-purpose flour
  • 2 cups milk (whole or 2%)
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder (optional)
  • 1/4 tsp crushed red pepper flakes (optional, for spice)

For the Toppings:

  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese (or Monterey Jack)
  • 1/4 cup cooked and crumbled bacon (optional)
  • 2 tbsp chopped green onions or fresh parsley (optional)

Instructions

Step 1: Prepare the Biscuit Crust

  1. Preheat oven to 375°F (190°C) and grease a 12-inch pizza pan or large baking sheet.
  2. Separate the biscuits and flatten them using your hands or a rolling pin. Press them together in the pan to form a crust, ensuring there are no gaps.
  3. Brush with melted butter and bake for 8-10 minutes, or until lightly golden. (It will finish baking with the toppings.)

Step 2: Make the Sausage Gravy

  1. Brown the sausage in a large skillet over medium heat, breaking it apart as it cooks.
  2. Once fully cooked, add butter and stir until melted.
  3. Sprinkle in the flour and stir for 1-2 minutes to cook off the raw taste.
  4. Gradually whisk in the milk, stirring continuously until thickened (about 5 minutes).
  5. Season with salt, pepper, and garlic powder. Remove from heat.

Step 3: Cook the Eggs

  1. In a small bowl, whisk the eggs with a pinch of salt and pepper.
  2. Scramble them in a pan over medium-low heat until just set. (They will finish cooking in the oven.)

Step 4: Assemble & Bake

  1. Spread the sausage gravy evenly over the biscuit crust.
  2. Top with scrambled eggs, then sprinkle with cheddar and mozzarella cheese.
  3. Add crumbled bacon (if using).
  4. Bake for 10-12 minutes, or until the cheese is melted and bubbly.

Step 5: Serve & Enjoy!

  • Sprinkle with chopped green onions or parsley for extra flavor.
  • Slice and serve warm!

Notes

  • Make it Spicier: Add hot sauce to the gravy or use spicy breakfast sausage.
  • Biscuit Dough Alternative: Use crescent roll dough or a pre-made pizza crust.
  • Storage: Keep leftovers in the fridge for up to 3 days. Reheat in the oven or air fryer for best results.
  • Make Ahead Tip: Prep the sausage gravy and eggs ahead of time, then assemble and bake when ready.
