Description

These Birthday Cookie Bars are the perfect treat for any celebration! Soft, chewy, and bursting with colorful sprinkles, these bars are like a birthday cake in cookie form. They’re quick to make, fun to decorate, and ideal for sharing with friends and family on any special occasion!

  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup rainbow sprinkles (plus extra for topping)
  • 1/2 cup chocolate chips (optional)
  • 1/2 cup white chocolate chips (optional)

  • Preheat the oven: Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
  • Cream the butter and sugars: In a large bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  • Add eggs and vanilla: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Mix the dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the sprinkles and chips: Gently fold in the rainbow sprinkles and chocolate chips (if using), being careful not to overmix.
  • Bake the bars: Spread the dough evenly into the prepared pan. Sprinkle some extra sprinkles on top for a fun touch. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool and cut: Allow the cookie bars to cool completely in the pan before cutting into squares. Enjoy!

  • These bars can be customized with different types of chips or candies. M&Ms or mini marshmallows can be great additions.
  • If you want thicker bars, use an 8×8-inch pan instead of the 9×13-inch pan, but make sure to adjust the baking time (it may take a bit longer).
  • For extra fun, drizzle melted white or milk chocolate over the bars once they have cooled.
