- Cream the butter and sugars: In a large bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Add eggs and vanilla: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Mix the dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the sprinkles and chips: Gently fold in the rainbow sprinkles and chocolate chips (if using), being careful not to overmix.
- Bake the bars: Spread the dough evenly into the prepared pan. Sprinkle some extra sprinkles on top for a fun touch. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and cut: Allow the cookie bars to cool completely in the pan before cutting into squares. Enjoy!
