For the Meatloaf:
- 2 lbs ground beef (80/20 for best flavor)
- 1 cup breadcrumbs (or crushed crackers)
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 large eggs
- 1/2 cup milk
- 1/3 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano or parsley
For the Glaze:
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 teaspoon Worcestershire sauce
- 1 teaspoon mustard (optional, for tang)
Instructions
Preheat & Prep
- Preheat oven to 375°F (190°C).
- Line a baking sheet with parchment paper or grease a 9×5-inch loaf pan.
2. Make the Meatloaf Mixture
- In a large bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, garlic powder, onion powder, and oregano.
- Mix gently with your hands until just combined (do not overmix).
3. Shape & Bake
- Shape the meat mixture into a loaf shape and place it on the baking sheet (or press into the loaf pan).
- Bake for 40 minutes.
4. Add the Glaze
- In a small bowl, mix ketchup, brown sugar, Worcestershire sauce, and mustard.
- Spread half of the glaze over the meatloaf.
5. Finish Baking
- Return to the oven and bake for 15–20 more minutes, until the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for 10 minutes before slicing.
Notes
- For extra juiciness, add ½ cup grated carrot or chopped mushrooms.
- Swap ground beef for turkey for a lighter version.
- Use BBQ sauce instead of ketchup for a smoky twist!
