Description

For the Meatloaf:

  • 2 lbs ground beef (80/20 for best flavor)
  • 1 cup breadcrumbs (or crushed crackers)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup milk
  • 1/3 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano or parsley

For the Glaze:

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon mustard (optional, for tang)

Instructions

Preheat & Prep

  1. Preheat oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper or grease a 9×5-inch loaf pan.

2. Make the Meatloaf Mixture

  1. In a large bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, garlic powder, onion powder, and oregano.
  2. Mix gently with your hands until just combined (do not overmix).

3. Shape & Bake

  1. Shape the meat mixture into a loaf shape and place it on the baking sheet (or press into the loaf pan).
  2. Bake for 40 minutes.

4. Add the Glaze

  1. In a small bowl, mix ketchup, brown sugar, Worcestershire sauce, and mustard.
  2. Spread half of the glaze over the meatloaf.

5. Finish Baking

  1. Return to the oven and bake for 15–20 more minutes, until the internal temperature reaches 160°F (71°C).
  2. Let the meatloaf rest for 10 minutes before slicing.

Notes

  • For extra juiciness, add ½ cup grated carrot or chopped mushrooms.
  • Swap ground beef for turkey for a lighter version.
  • Use BBQ sauce instead of ketchup for a smoky twist!
