- For the Beef:
- 1 1/2 lbs beef stew meat (or chuck roast, cut into cubes)
- 2 tbsp olive oil
- 1 small onion, diced
- 3 garlic cloves, minced
- 4 cups beef broth
- 1 cup water
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 1/2 tsp paprika
- For the Noodles:
- 12 oz egg noodles
- 1 tbsp butter
- For Thickening (Optional):
- 2 tbsp cornstarch
- 2 tbsp cold water
Instructions
- Sear the Beef:
- Heat olive oil in a large pot over medium-high heat.
- Add the beef and sear on all sides until browned, about 5 minutes.
- Remove the beef and set aside.
- Cook the Aromatics:
- In the same pot, add the diced onion and cook until softened, about 3 minutes.
- Stir in the garlic and cook for another 30 seconds.
- Simmer the Beef:
- Return the beef to the pot and add the beef broth, water, Worcestershire sauce, salt, pepper, thyme, and paprika.
- Bring to a boil, then reduce heat and simmer covered for 1 ½ to 2 hours, or until the beef is tender.
- Cook the Noodles:
- About 10 minutes before the beef is done, cook the egg noodles according to package instructions.
- Drain and toss with butter.
- Thicken the Sauce (Optional):
- If you prefer a thicker sauce, mix cornstarch and cold water in a small bowl.
- Stir into the pot and simmer for 5 more minutes until slightly thickened.
- Combine & Serve:
- Stir the cooked noodles into the beef mixture.
- Serve warm, garnished with fresh parsley if desired.

- Slow Cooker Option: Sear the beef and onions, then transfer to a slow cooker. Add all liquids and seasonings, cover, and cook on LOW for 6-8 hours. Stir in cooked noodles before serving.
- Instant Pot Option: Sear the beef using the Sauté function, then add all ingredients (except noodles) and pressure cook on HIGH for 35 minutes. Quick release, then stir in cooked noodles.
- Add Vegetables: Try adding mushrooms, peas, or carrots for extra flavor.
