Description

A hearty, comforting dish made with tender beef, savory broth, and egg noodles. Perfect for a cozy dinner!


Ingredients

  • For the Beef:
  • 1 1/2 lbs beef stew meat (or chuck roast, cut into cubes)
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 1 cup water
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 tsp paprika
  • For the Noodles:
  • 12 oz egg noodles
  • 1 tbsp butter
  • For Thickening (Optional):
  • 2 tbsp cornstarch
  • 2 tbsp cold water

Instructions

  • Sear the Beef:
  • Heat olive oil in a large pot over medium-high heat.
  • Add the beef and sear on all sides until browned, about 5 minutes.
  • Remove the beef and set aside.
  • Cook the Aromatics:
  • In the same pot, add the diced onion and cook until softened, about 3 minutes.
  • Stir in the garlic and cook for another 30 seconds.
  • Simmer the Beef:
  • Return the beef to the pot and add the beef broth, water, Worcestershire sauce, salt, pepper, thyme, and paprika.
  • Bring to a boil, then reduce heat and simmer covered for 1 ½ to 2 hours, or until the beef is tender.
  • Cook the Noodles:
  • About 10 minutes before the beef is done, cook the egg noodles according to package instructions.
  • Drain and toss with butter.
  • Thicken the Sauce (Optional):
  • If you prefer a thicker sauce, mix cornstarch and cold water in a small bowl.
  • Stir into the pot and simmer for 5 more minutes until slightly thickened.
  • Combine & Serve:
  • Stir the cooked noodles into the beef mixture.
  • Serve warm, garnished with fresh parsley if desired.

Notes

  • :
  • Slow Cooker Option: Sear the beef and onions, then transfer to a slow cooker. Add all liquids and seasonings, cover, and cook on LOW for 6-8 hours. Stir in cooked noodles before serving.
  • Instant Pot Option: Sear the beef using the Sauté function, then add all ingredients (except noodles) and pressure cook on HIGH for 35 minutes. Quick release, then stir in cooked noodles.
  • Add Vegetables: Try adding mushrooms, peas, or carrots for extra flavor.
