Description

These BBQ Pineapple Chicken Kabobs are the perfect combo of sweet, smoky, and savory. Juicy chicken, fresh pineapple chunks, and colorful bell peppers are grilled to perfection and brushed with your favorite barbecue sauce. Great for summer cookouts or weeknight dinners on the grill!


Ingredients

  • 1 1/2 lbs boneless skinless chicken breasts, cut into 1-inch cubes

  • 1 fresh pineapple, peeled, cored, and cut into chunks

  • 2 bell peppers (any color), cut into chunks

  • 1 red onion, cut into chunks

  • 1 cup barbecue sauce (store-bought or homemade)

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • Salt and pepper, to taste

  • Wooden or metal skewers


Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes.

  2. In a large bowl, combine chicken, olive oil, garlic powder, smoked paprika, salt, and pepper. Toss to coat evenly.

  3. Thread chicken, pineapple, bell peppers, and onion onto the skewers, alternating pieces.

  4. Preheat the grill to medium-high heat.

  5. Place the kabobs on the grill and cook for 10–12 minutes, turning occasionally, until chicken is cooked through.

  6. Brush with barbecue sauce during the last few minutes of grilling, turning to coat all sides.

  7. Remove from grill and let rest for a few minutes before serving.


Notes

  • Feel free to use other vegetables like zucchini or cherry tomatoes.

  • You can marinate the chicken in BBQ sauce ahead of time for extra flavor.

  • Serve with rice, salad, or grilled corn for a full meal.
