Step 1: Marinate & Skewer the Chicken
- In a bowl, mix BBQ sauce, olive oil, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper.
- Add the chicken cubes, tossing to coat. Let marinate for 15-30 minutes (or up to 4 hours for extra flavor).
- Thread the chicken onto soaked wooden skewers.
Step 2: Cook the Skewers
Grill Method:
4. Preheat the grill to medium-high heat (375-400°F).
5. Grill the skewers for 5-7 minutes per side, basting with extra BBQ sauce, until the chicken reaches 165°F (75°C).
Oven Method:
4. Preheat oven to 400°F (200°C).
5. Place skewers on a lined baking sheet and bake for 20-25 minutes, flipping halfway through.
Air Fryer Method:
4. Preheat air fryer to 375°F (190°C).
5. Cook for 10-12 minutes, flipping halfway through.
Step 3: Assemble the Salad
- In a large bowl, combine lettuce, tomatoes, cucumbers, red onions, cheese, avocado, and roasted corn.
- Place grilled BBQ chicken skewers on top.
- Drizzle with BBQ ranch or lime vinaigrette.
