Description

This grilled BBQ chicken salad is loaded with tender chicken, crisp greens, colorful veggies, and a smoky-sweet BBQ drizzle. It’s a healthy, protein-packed meal that’s easy to customize with your favorite toppings!

Step 1: Marinate & Skewer the Chicken

  1. In a bowl, mix BBQ sauce, olive oil, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper.
  2. Add the chicken cubes, tossing to coat. Let marinate for 15-30 minutes (or up to 4 hours for extra flavor).
  3. Thread the chicken onto soaked wooden skewers.

Step 2: Cook the Skewers

Grill Method:
4. Preheat the grill to medium-high heat (375-400°F).
5. Grill the skewers for 5-7 minutes per side, basting with extra BBQ sauce, until the chicken reaches 165°F (75°C).

Oven Method:
4. Preheat oven to 400°F (200°C).
5. Place skewers on a lined baking sheet and bake for 20-25 minutes, flipping halfway through.

Air Fryer Method:
4. Preheat air fryer to 375°F (190°C).
5. Cook for 10-12 minutes, flipping halfway through.

Step 3: Assemble the Salad

  1. In a large bowl, combine lettuce, tomatoes, cucumbers, red onions, cheese, avocado, and roasted corn.
  2. Place grilled BBQ chicken skewers on top.
  3. Drizzle with BBQ ranch or lime vinaigrette.

Step 4: Serve & Enjoy!

  1. Garnish with fresh cilantro or green onions and serve immediately!
