Description

This BBQ Chicken Dip is a creamy, cheesy, and smoky party dip made with shredded chicken, tangy BBQ sauce, cream cheese, and melty cheddar. It’s perfect for game day, cookouts, or whenever you need an easy appetizer everyone will love. Serve it with chips, crackers, or fresh veggies!


Ingredients

2 cups cooked shredded chicken (rotisserie chicken works great)

8 oz cream cheese, softened

1/2 cup BBQ sauce (your favorite brand or homemade)

1/2 cup ranch dressing

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

1/4 teaspoon garlic powder

Optional toppings: green onions, crispy bacon bits, more cheese, fresh cilantro

1 lb boneless skinless chicken breasts or thighs, diced

1 tablespoon Cajun seasoning (plus more to taste)

1 small onion, diced

1 red bell pepper, diced

3 cloves garlic, minced

4 cups chicken broth

1 cup milk or half-and-half

1 cup heavy cream

8 oz penne or rotini pasta

3/4 cup grated Parmesan cheese

Salt and black pepper, to taste

Optional: red pepper flakes for extra heat

Optional toppings: more Parmesan, chopped parsley, or a dash of hot sauce


Instructions

 

  1. Preheat oven to 375°F (190°C).

  2. In a large bowl, mix cream cheese, BBQ sauce, ranch dressing, and garlic powder until smooth.

  3. Fold in shredded chicken, cheddar, and mozzarella cheese.

  4. Spread the mixture into a baking dish (8×8 or similar size).

  5. Bake for 20–25 minutes, or until hot and bubbly.

  6. Top with green onions, bacon bits, or extra cheese if desired.

  7. Serve warm with tortilla chips, crackers, or veggie sticks.


Notes

  • Use spicy BBQ sauce or add a pinch of cayenne for a kick.

  • This dip can also be made in a slow cooker on LOW for 2–3 hours.

  • Make it ahead and store in the fridge – just bake when ready to serve!
