These tea sandwiches are a delightful assortment inspired by Ina Garten, the Barefoot Contessa. They feature fresh ingredients and simple flavors like cucumber with herbed cream cheese, smoked salmon with dill, and egg salad with arugula. They’re perfect for entertaining or enjoying with a pot of hot tea
Ingredients
Cucumber & Herbed Cream Cheese:

1 English cucumber, thinly sliced

8 oz cream cheese, softened

1 tablespoon fresh dill, chopped

1 tablespoon fresh chives, chopped

1 teaspoon lemon juice
-
1/4 teaspoon salt
-
8 slices white or wheat sandwich bread, crusts removed
Smoked Salmon & Dill:

8 oz smoked salmon
-
4 oz cream cheese, softened
-
1 tablespoon fresh dill, chopped
-
1 tablespoon capers (optional)
-
1 teaspoon lemon zest
-
8 slices pumpernickel or rye bread, crusts removed
Egg Salad & Arugula:
-
6 large eggs, hard boiled and peeled
-
1/4 cup mayonnaise
-
1 teaspoon Dijon mustard
-
Salt and pepper to taste

1/2 cup fresh arugula
-
8 slices white sandwich bread, crusts removed
Instructions
Cucumber & Herbed Cream Cheese:

In a bowl, mix cream cheese, dill, chives, lemon juice, and salt until smooth.

Spread the herbed cream cheese on each slice of bread.

Layer cucumber slices on 4 slices, then top with the other slices.

Gently press and slice into triangles or fingers.
Smoked Salmon & Dill:

In a bowl, mix cream cheese, dill, lemon zest, and capers if using.

Spread mixture on all bread slices.

Layer smoked salmon on half the slices, then top with remaining bread.

Slice and serve.
Egg Salad & Arugula:

Mash eggs in a bowl and mix with mayonnaise, mustard, salt, and pepper.

Spread egg salad onto 4 slices of bread.

Add arugula, top with remaining slices, and slice as desired.
Notes

Make sure cream cheese is soft for easier spreading.

These sandwiches can be made a few hours ahead; cover with a damp paper towel and plastic wrap to keep them fresh.
