For the Chicken:

- 1 cup buttermilk
- 1 cup all-purpose flour

- 1/4 cup sweet chili sauce

- 1 teaspoon rice vinegar

Marinate the Chicken:
- In a bowl, combine buttermilk and the egg. Add the chicken pieces, ensuring they are well coated. Let them marinate for at least 30 minutes (or up to 4 hours for extra tenderness).

- In a separate bowl, mix flour, cornstarch, salt, black pepper, garlic powder, and smoked paprika.

Bread the Chicken:
- Remove the chicken from the buttermilk, letting excess drip off. Dredge each piece in the flour mixture until fully coated.

Fry the Chicken:
- Heat about 2 inches of vegetable oil in a deep pan over medium-high heat (350°F/175°C).
- Fry the chicken in batches, making sure not to overcrowd the pan. Cook for 4-5 minutes or until golden brown and crispy. Drain on a paper towel-lined plate.

- In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, honey, rice vinegar, and garlic powder.

- Toss the fried chicken in the Bang Bang Sauce until evenly coated.
- Garnish with chopped green onions and sesame seeds. Serve immediately.

- If you prefer a lighter version, bake or air-fry the chicken instead of deep-frying.
- Adjust the spice level by adding more or less Sriracha.
