Description

These Balsamic Garlic Grilled Mushroom Skewers are juicy, smoky, and packed with bold, savory flavor. The mushrooms soak up a simple marinade of balsamic vinegar, garlic, and herbs before hitting the grill. They’re an easy, crowd-pleasing side dish or meatless main that’s perfect for cookouts, BBQs, or weeknight grilling.


Ingredients

  • 1 1/2 lbs whole cremini or white mushrooms (cleaned and stems trimmed)

  • 3 tablespoons balsamic vinegar

  • 2 tablespoons olive oil

  • 3 garlic cloves, minced

  • 1 tablespoon soy sauce (or tamari for gluten-free)

  • 1 teaspoon dried oregano

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon salt

  • Fresh parsley, chopped (for garnish)

 

  • Skewers (if wooden, soak in water for 30 minutes)


Instructions

In a large bowl, whisk together balsamic vinegar, olive oil, garlic, soy sauce, oregano, salt, and pepper.

 

Add the mushrooms and toss to coat. Cover and marinate for at least 30 minutes (up to 2 hours for deeper flavor).

 

Preheat the grill to medium-high heat. Thread mushrooms onto skewers.

 

Grill for 10–12 minutes, turning occasionally, until mushrooms are tender and slightly charred.

 

Remove from grill and garnish with fresh parsley.

 

Serve warm as a side or over rice, salads, or pasta.

 


Notes

Use baby portobello mushrooms for a meatier bite.

 

Marinate ahead of time for quick weeknight cooking.

 

Works great in a grill pan or under a broiler if you don’t have an outdoor grill.
