Description

This slow cooker balsamic chicken is sweet, tangy, and full of flavor! It’s a perfect dump-and-go recipe for an easy dinner.


Ingredients

  • 4 boneless, skinless chicken breasts (or 6 thighs)
  • 1/2 cup balsamic vinegar
  • 1/4 cup honey
  • 2 tbsp olive oil
  • 2 tbsp soy sauce (or coconut aminos for gluten-free)
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional, for spice)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced onions

Instructions

  • Prepare the sauce: In a small bowl, whisk together balsamic vinegar, honey, olive oil, soy sauce, garlic, oregano, salt, pepper, and red pepper flakes.
  • Add to slow cooker: Place chicken in the slow cooker and pour the balsamic mixture over the top. Add cherry tomatoes and onions.
  • Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender.
  • Serve: Spoon extra sauce over the chicken and serve with rice, quinoa, or roasted veggies.

Notes

  • For a thicker sauce: Remove the chicken and stir in 1 tbsp cornstarch mixed with 2 tbsp water. Let cook for 5-10 more minutes.
  • Use bone-in chicken thighs for even more flavor.
  • Great side dishes: Serve with mashed potatoes, roasted Brussels sprouts, or steamed green beans.
