- 1 1/2 lbs large shrimp, peeled and deveined (leave tails on for presentation if desired)
- 4 tbsp unsalted butter, melted
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs (Panko or regular)
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 tbsp lemon juice (plus extra wedges for serving)
- 1 tsp Old Bay seasoning (or your favorite seafood seasoning)
- 1/2 tsp paprika (for color)
- 1/2 tsp black pepper
- 1/4 tsp salt
- 1/4 cup white wine (optional, for added depth of flavor)
Instructions
- Preheat & Prep:
Preheat your oven to 375°F (190°C). Lightly grease a baking dish with butter or cooking spray. - Prepare the Stuffing:
In a skillet, heat olive oil over medium heat. Add the chopped onion and cook until softened (about 3–4 minutes).
Stir in the minced garlic and cook for another minute until fragrant.
Remove from heat and add the breadcrumbs, Parmesan cheese, parsley, lemon juice, Old Bay seasoning, paprika, salt, and black pepper.
Drizzle in the melted butter and mix until the stuffing is moist and holds together slightly. Add white wine if using for extra moisture and flavor. - Assemble the Casserole:
Arrange the shrimp in a single layer in the prepared baking dish.
Spoon the stuffing mixture generously over the shrimp, pressing lightly to help it adhere. - Bake:
Bake uncovered for 15–18 minutes, or until the shrimp are pink, opaque, and cooked through, and the stuffing is golden brown. - Finish & Serve:
For an extra crispy topping, broil for an additional 1–2 minutes at the end, watching closely to avoid burning.
Garnish with fresh parsley and serve with lemon wedges on the side.
Notes
- Seafood Twist: Add chopped crab meat to the stuffing for a luxurious touch.
- Make-Ahead: Assemble the casserole a few hours ahead and refrigerate until ready to bake.
- Serving Suggestion: Pairs beautifully with a simple green salad, garlic bread, or roasted vegetables.
