For the Shrimp:
- 1 1/2 lbs large shrimp (16/20 count), peeled and deveined, tails on
- 2 tbsp butter, melted
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp Old Bay seasoning (optional)
- 1/2 tsp lemon zest
For the Stuffing:
- 1 1/2 cups Ritz crackers or Panko breadcrumbs, crushed
- 1/4 cup grated Parmesan cheese
- 3 tbsp unsalted butter, melted
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1 tbsp fresh parsley, chopped
- 1 tbsp lemon juice
- 1/4 cup chicken broth (or seafood stock)
For Topping & Garnish:
- 1 tbsp fresh parsley, chopped
- Lemon wedges, for serving
Instructions
- Preheat Oven:
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Prepare the Shrimp:
- Butterfly the shrimp by slicing down the back, but not cutting all the way through.
- Toss shrimp with melted butter, salt, pepper, Old Bay seasoning, and lemon zest.
- Arrange shrimp in the baking dish, cut-side up, forming a small pocket for the stuffing.
- Make the Stuffing:
- In a bowl, mix crushed Ritz crackers (or Panko), Parmesan cheese, melted butter, olive oil, garlic, onion powder, paprika, parsley, lemon juice, and chicken broth until combined.
- The mixture should be slightly moist but crumbly.
- Assemble the Casserole:
- Spoon about 1 tablespoon of stuffing onto each butterflied shrimp.
- If there’s extra stuffing, spread it around the shrimp in the casserole dish.
- Bake to Perfection:
- Bake for 15-18 minutes, or until shrimp are pink and opaque, and the stuffing is golden brown.
- For extra crispiness, broil for 1-2 minutes at the end.
- Garnish & Serve:
- Sprinkle with fresh parsley and serve with lemon wedges.
- Enjoy with rice, pasta, or a fresh salad!
Notes
- Swap crab meat for some of the breadcrumbs for an even richer stuffing.
- Add a pinch of red pepper flakes for a little heat.
- Serve with garlic butter, hollandaise, or a drizzle of white wine sauce for extra flavor.
