Description

This Baked Stuffed Shrimp Casserole features large, juicy shrimp baked in a buttery, flavorful stuffing made with breadcrumbs, garlic, Parmesan, and herbs. It’s an easy yet elegant dish that’s great for entertaining or a cozy seafood dinner at home.

For the Shrimp:

  • 1 1/2 lbs large shrimp (16/20 count), peeled and deveined, tails on
  • 2 tbsp butter, melted
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp Old Bay seasoning (optional)
  • 1/2 tsp lemon zest

For the Stuffing:

  • 1 1/2 cups Ritz crackers or Panko breadcrumbs, crushed
  • 1/4 cup grated Parmesan cheese
  • 3 tbsp unsalted butter, melted
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice
  • 1/4 cup chicken broth (or seafood stock)

For Topping & Garnish:

  • 1 tbsp fresh parsley, chopped
  • Lemon wedges, for serving

Instructions

  • Preheat Oven:
    • Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  • Prepare the Shrimp:
    • Butterfly the shrimp by slicing down the back, but not cutting all the way through.
    • Toss shrimp with melted butter, salt, pepper, Old Bay seasoning, and lemon zest.
    • Arrange shrimp in the baking dish, cut-side up, forming a small pocket for the stuffing.
  • Make the Stuffing:
    • In a bowl, mix crushed Ritz crackers (or Panko), Parmesan cheese, melted butter, olive oil, garlic, onion powder, paprika, parsley, lemon juice, and chicken broth until combined.
    • The mixture should be slightly moist but crumbly.
  • Assemble the Casserole:
    • Spoon about 1 tablespoon of stuffing onto each butterflied shrimp.
    • If there’s extra stuffing, spread it around the shrimp in the casserole dish.
  • Bake to Perfection:
    • Bake for 15-18 minutes, or until shrimp are pink and opaque, and the stuffing is golden brown.
    • For extra crispiness, broil for 1-2 minutes at the end.
  • Garnish & Serve:
    • Sprinkle with fresh parsley and serve with lemon wedges.
    • Enjoy with rice, pasta, or a fresh salad!

Notes

  • Swap crab meat for some of the breadcrumbs for an even richer stuffing.
  • Add a pinch of red pepper flakes for a little heat.
  • Serve with garlic butter, hollandaise, or a drizzle of white wine sauce for extra flavor.
