- 1 celery stalk, finely chopped

- 1/4–1/2 teaspoon Cajun seasoning
- 1/4 teaspoon freshly ground black pepper
- 4 ounces cream cheese, cut into small cubes
- 1/4 cup shaved Parmesan cheese
- 1/4 cup shaved Fontina cheese
- Kosher salt, to taste
- 1/4 teaspoon crushed red pepper flakes
- 1 green onion, thinly sliced, for garnish

- Preheat the broiler on low.
- Arrange the baguette slices in a single layer on a baking sheet.
- Broil for 3–5 minutes per side, or until lightly browned. Keep a close eye to prevent burning.

Prepare the Shrimp Mixture:
- In a skillet over medium heat, warm the olive oil.
- Add the minced shrimp, chopped onion, and celery. Cook for about 1 minute, stirring frequently.
- Stir in the minced garlic, Cajun seasoning, and black pepper. Continue cooking for another minute, stirring constantly.
- Reduce the heat to low. Add the cream cheese, Parmesan, and Fontina. Stir until the cheeses are melted and the mixture is well combined.
- Taste and season with kosher salt as needed.

- Preheat the oven to 400°F (200°C).
- Spread the shrimp mixture evenly over the toasted baguette slices.
- Sprinkle each slice with crushed red pepper flakes.
- Place the assembled toasts back onto the baking sheet.
