Description

These Baked Shrimp and Broccoli Foil Packs are a light and flavorful meal made with juicy shrimp, tender broccoli, and a delicious garlic butter sauce. Everything cooks in a foil packet for easy cleanup and can be baked or grilled!


Ingredients

  • For the Foil Packs:
  • 1 pound large shrimp (peeled & deveined)
  • 2 cups broccoli florets
  • 1 tablespoon olive oil
  • 2 tablespoons butter (melted)
  • 3 cloves garlic (minced)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons grated Parmesan cheese (optional)
  • For Serving:
  • Lemon wedges
  • Fresh parsley (chopped)

Instructions

  • Preheat & Prepare:
  • Preheat oven to 400°F (200°C) (or preheat grill to medium-high).
  • Cut 4 large pieces of aluminum foil (about 12 inches each).
  • Season the Shrimp & Broccoli:
  • In a large bowl, toss shrimp and broccoli with olive oil, melted butter, garlic, salt, pepper, paprika, red pepper flakes, lemon zest, and lemon juice.
  • Assemble the Foil Packs:
  • Divide the shrimp and broccoli evenly among the four pieces of foil.
  • Sprinkle with Parmesan cheese (if using).
  • Fold the foil over the ingredients and seal tightly to form a packet.
  • Bake or Grill:
  • Oven: Place foil packs on a baking sheet and bake for 12–15 minutes, until shrimp are pink and broccoli is tender.
  • Grill: Place foil packs on the grill and cook for 8–10 minutes, flipping once.
  • Serve & Enjoy:
  • Carefully open the foil packs (watch for steam!).
  • Garnish with fresh parsley and lemon wedges.

Notes

  • Add carbs: Serve over rice, quinoa, or pasta for a heartier meal.
  • Swap veggies: Use asparagus, zucchini, or bell peppers instead of broccoli.
  • Spice it up: Add more red pepper flakes or a drizzle of hot sauce!
