For the Ham:
- 1 fully cooked bone-in ham (8–10 lbs)
- 1 can (20 oz) pineapple slices in juice (reserve juice)
- 1/2 cup whole cloves (optional, for decoration)
For the Pineapple Brown Sugar Glaze:
- 1 cup brown sugar
- 1/2 cup pineapple juice (reserved from the can)
- 1/4 cup honey or maple syrup
- 2 tablespoons Dijon mustard
- 2 tablespoons apple cider vinegar (or orange juice)
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves (optional)
For Garnish:
- Maraschino cherries (optional, for a festive look)
Instructions
Prepare the Ham:
- Preheat oven to 325°F (165°C).
- If the ham has a thick rind, carefully score the fat in a crisscross pattern (about ½ inch deep).
- If using whole cloves, insert them into the ham at the intersections of the scored lines.
2. Make the Pineapple Brown Sugar Glaze:
- In a small saucepan over medium heat, whisk together brown sugar, pineapple juice, honey, Dijon mustard, apple cider vinegar, cinnamon, and ground cloves.
- Bring to a gentle simmer and cook for 3-5 minutes, stirring, until slightly thickened. Remove from heat.
3. Bake the Ham:
- Place the ham in a large roasting pan. Brush generously with half of the glaze.
- Arrange pineapple slices over the ham, securing them with toothpicks. If using, place maraschino cherries in the centers.
- Cover loosely with foil and bake for 1½ to 2 hours, basting every 30 minutes with the glaze.
4. Caramelize & Serve:
- Remove the foil, brush with the remaining glaze, and increase the oven temperature to 400°F (200°C) for the last 15-20 minutes to caramelize.
- Let the ham rest for 10-15 minutes before slicing.
- Serve warm with extra glaze on the side.
