Description

These Baked Feta Eggs are rich, creamy, and packed with Mediterranean flavors. A block of feta cheese is baked with tomatoes, garlic, and seasonings, then eggs are added for a perfectly soft and delicious dish. Serve with crusty bread or pita for the ultimate breakfast experience!

  • 1 block (6-8 oz) feta cheese
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon dried oregano
  • Salt & black pepper, to taste
  • 4 large eggs
  • 2 tablespoons fresh parsley or basil, chopped
  • Crusty bread or pita, for serving

Instructions

  • Preheat oven to 375°F (190°C). Lightly grease a small baking dish.
  • Prepare the feta base: Place the block of feta in the center of the dish. Scatter cherry tomatoes around it and drizzle with olive oil. Add minced garlic, red pepper flakes, oregano, salt, and pepper.
  • Bake the feta mixture: Bake uncovered for 15 minutes, or until the tomatoes soften and start to burst.
  • Add the eggs: Remove the dish from the oven and carefully crack the eggs over the tomatoes and feta.
  • Bake again: Return to the oven and bake for another 8-10 minutes, or until the egg whites are set but the yolks are still slightly runny (or to your desired doneness).
  • Garnish & serve: Sprinkle with fresh parsley or basil. Serve warm with crusty bread or pita for dipping.

  • Adjust the eggs’ doneness by checking after 8 minutes—bake longer for firmer yolks.
