Description

  • 6 oz (170g) feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional, for heat)
  • 1/4 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 4 large eggs
  • 1 tbsp fresh basil or parsley, chopped (for garnish)
  • Crusty bread or pita (for serving)

Instructions

  • Preheat Oven: Preheat oven to 375°F (190°C).
  • Prepare Tomato Base: In a small baking dish, toss cherry tomatoes with olive oil, garlic, oregano, red pepper flakes, salt, and black pepper.
  • Add Feta & Bake: Crumble feta over the tomatoes and bake for 12-15 minutes, until the tomatoes soften and feta starts to melt.
  • Add Eggs: Carefully crack eggs over the tomato-feta mixture. Return to the oven and bake for 8-12 minutes, or until egg whites are set but yolks are still slightly runny.
  • Garnish & Serve: Sprinkle with fresh basil or parsley and serve with warm crusty bread or pita.

Notes

  • For a runnier yolk: Bake for 8 minutes, or longer for firmer eggs.
  • Spicy Version: Add extra red pepper flakes or drizzle with hot sauce.
  • Make it Heartier: Add sautéed spinach or roasted bell peppers before baking.
