- 6 oz (170g) feta cheese, crumbled
- 1 cup cherry tomatoes, halved
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 tsp dried oregano
- 1/2 tsp red pepper flakes (optional, for heat)
- 1/4 tsp salt (adjust to taste)
- 1/4 tsp black pepper
- 4 large eggs
- 1 tbsp fresh basil or parsley, chopped (for garnish)
- Crusty bread or pita (for serving)
Instructions
- Preheat Oven: Preheat oven to 375°F (190°C).
- Prepare Tomato Base: In a small baking dish, toss cherry tomatoes with olive oil, garlic, oregano, red pepper flakes, salt, and black pepper.
- Add Feta & Bake: Crumble feta over the tomatoes and bake for 12-15 minutes, until the tomatoes soften and feta starts to melt.
- Add Eggs: Carefully crack eggs over the tomato-feta mixture. Return to the oven and bake for 8-12 minutes, or until egg whites are set but yolks are still slightly runny.
- Garnish & Serve: Sprinkle with fresh basil or parsley and serve with warm crusty bread or pita.

- For a runnier yolk: Bake for 8 minutes, or longer for firmer eggs.
