Description

A warm and wholesome baked oatmeal packed with juicy blueberries and a hint of cinnamon. Perfect for meal prep or a hearty breakfast!

  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter or coconut oil
  • 1 cup fresh or frozen blueberries

Instructions

  • Preheat oven to 375°F (190°C). Grease a baking dish (8×8-inch or similar).
  • Mix dry ingredients: In a large bowl, combine oats, baking powder, cinnamon, and salt.
  • Mix wet ingredients: In another bowl, whisk together milk, eggs, maple syrup, vanilla, and melted butter.
  • Combine: Pour the wet ingredients into the dry ingredients and mix well. Gently fold in the blueberries.
  • Bake: Pour the mixture into the greased dish and spread evenly. Bake for 30-35 minutes or until golden brown and set.
