For the Meatloaf:
- 1 1/2 lbs ground beef (80/20 recommended)
- 6 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs (panko or regular)
- 1 egg
- 1/4 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon yellow mustard
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
For the Glaze:
- 1/4 cup ketchup
- 1 tablespoon yellow mustard
- 1 tablespoon brown sugar
Instructions
- Preheat & Prep:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- Mix the Meatloaf:
- In a large bowl, combine ground beef, crumbled bacon, shredded cheddar, breadcrumbs, egg, mayonnaise, ketchup, mustard, Worcestershire sauce, salt, pepper, garlic powder, and onion powder. Mix until just combined (don’t overmix).
- Shape & Bake:
- Shape the mixture into a loaf and place it on the prepared baking sheet (or in a loaf pan).
- Bake for 35 minutes.
- Make the Glaze:
- While the meatloaf is baking, mix the ketchup, mustard, and brown sugar in a small bowl.
- Glaze & Finish Baking:
- Remove the meatloaf from the oven and spread the glaze over the top.
- Return to the oven and bake for another 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
- Rest & Serve:
- Let the meatloaf rest for 5-10 minutes before slicing.
- Serve with mashed potatoes, roasted veggies, or your favorite burger-style sides!
Notes
- Swap cheddar for pepper jack or Swiss for a different cheesy twist.
- Use ground turkey for a lighter version.
- Add chopped pickles to the mix for an extra burger-like flavor!
