Description

This Bacon Cheeseburger Meatloaf combines all the flavors of a juicy bacon cheeseburger in a comforting, oven-baked meatloaf. It’s packed with ground beef, crispy bacon, gooey cheese, and a tangy ketchup-mustard glaze. Perfect for a family dinner or meal prep!

For the Meatloaf:

  • 1 1/2 lbs ground beef (80/20 recommended)
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs (panko or regular)
  • 1 egg
  • 1/4 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

For the Glaze:

  • 1/4 cup ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon brown sugar

Instructions

  • Preheat & Prep:
    • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  • Mix the Meatloaf:
    • In a large bowl, combine ground beef, crumbled bacon, shredded cheddar, breadcrumbs, egg, mayonnaise, ketchup, mustard, Worcestershire sauce, salt, pepper, garlic powder, and onion powder. Mix until just combined (don’t overmix).
  • Shape & Bake:
    • Shape the mixture into a loaf and place it on the prepared baking sheet (or in a loaf pan).
    • Bake for 35 minutes.
  • Make the Glaze:
    • While the meatloaf is baking, mix the ketchup, mustard, and brown sugar in a small bowl.
  • Glaze & Finish Baking:
    • Remove the meatloaf from the oven and spread the glaze over the top.
    • Return to the oven and bake for another 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
  • Rest & Serve:
    • Let the meatloaf rest for 5-10 minutes before slicing.
    • Serve with mashed potatoes, roasted veggies, or your favorite burger-style sides!

Notes

  • Swap cheddar for pepper jack or Swiss for a different cheesy twist.
  • Use ground turkey for a lighter version.
  • Add chopped pickles to the mix for an extra burger-like flavor!
