This Bacon Cheeseburger Meatloaf is a delicious twist on a classic, featuring seasoned ground beef, crispy bacon, cheddar cheese, and a tangy glaze that makes it taste just like your favorite burger!

- For the Meatloaf:
- 1 1/2 lbs ground beef (80/20 for best flavor)
- 1/2 cup breadcrumbs (or crushed crackers)
- 1 large egg
- 1/2 cup milk
- 1 tbsp Worcestershire sauce
- 1/2 small onion, finely diced
- 2 cloves garlic, minced
- 1 tbsp yellow mustard
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 1 cup shredded cheddar cheese
- 4 slices bacon, cooked & crumbled
- For the Glaze:
- 1/4 cup ketchup
- 1 tbsp yellow mustard
- 1 tbsp brown sugar
- 1 tsp Worcestershire sauce
- For Topping:
- 4 more slices of bacon, cooked and chopped
- Extra shredded cheddar cheese (optional)
- Chopped pickles or green onions (optional)
Instructions
- Step 1: Preheat & Prep
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- Step 2: Mix the Meatloaf
- In a large bowl, mix ground beef, breadcrumbs, egg, milk, Worcestershire sauce, diced onion, garlic, mustard, salt, pepper, and paprika.
- Gently fold in shredded cheddar cheese and crumbled bacon. Do not overmix!
- Step 3: Shape & Bake
- Shape the mixture into a loaf on the prepared baking sheet (or use a loaf pan).
- Bake for 30 minutes, uncovered.
- Step 4: Add the Glaze & Bacon Topping
- In a small bowl, whisk together ketchup, mustard, brown sugar, and Worcestershire sauce.
- Remove the meatloaf from the oven, brush the glaze over the top, and sprinkle with chopped bacon.
- Return to the oven and bake for another 15–20 minutes, or until the internal temperature reaches 160°F (71°C).
- Step 5: Serve & Enjoy
- Let rest for 5–10 minutes, then slice. Garnish with extra cheddar, pickles, or green onions if desired. Serve with fries or a simple salad!
Notes
- Make it extra cheesy: Add a cheese-stuffed center by layering cheese cubes in the middle before shaping the loaf.
- Want more burger flavor? Add a spoonful of chopped pickles to the meat mixture.
- No breadcrumbs? Use crushed crackers or panko instead.
- Storage: Leftovers keep for 3 days in the fridge or can be frozen for up to 3 months.
