Description

This Bacon Cheeseburger Meatloaf is a delicious twist on a classic, featuring seasoned ground beef, crispy bacon, cheddar cheese, and a tangy glaze that makes it taste just like your favorite burger!


Ingredients

  • For the Meatloaf:
  • 1 1/2 lbs ground beef (80/20 for best flavor)
  • 1/2 cup breadcrumbs (or crushed crackers)
  • 1 large egg
  • 1/2 cup milk
  • 1 tbsp Worcestershire sauce
  • 1/2 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp yellow mustard
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked & crumbled
  • For the Glaze:
  • 1/4 cup ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp brown sugar
  • 1 tsp Worcestershire sauce
  • For Topping:
  • 4 more slices of bacon, cooked and chopped
  • Extra shredded cheddar cheese (optional)
  • Chopped pickles or green onions (optional)

Instructions

  • Step 1: Preheat & Prep
  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  • Step 2: Mix the Meatloaf
  • In a large bowl, mix ground beef, breadcrumbs, egg, milk, Worcestershire sauce, diced onion, garlic, mustard, salt, pepper, and paprika.
  • Gently fold in shredded cheddar cheese and crumbled bacon. Do not overmix!
  • Step 3: Shape & Bake
  • Shape the mixture into a loaf on the prepared baking sheet (or use a loaf pan).
  • Bake for 30 minutes, uncovered.
  • Step 4: Add the Glaze & Bacon Topping
  • In a small bowl, whisk together ketchup, mustard, brown sugar, and Worcestershire sauce.
  • Remove the meatloaf from the oven, brush the glaze over the top, and sprinkle with chopped bacon.
  • Return to the oven and bake for another 15–20 minutes, or until the internal temperature reaches 160°F (71°C).
  • Step 5: Serve & Enjoy
  • Let rest for 5–10 minutes, then slice. Garnish with extra cheddar, pickles, or green onions if desired. Serve with fries or a simple salad!

Notes

  • Make it extra cheesy: Add a cheese-stuffed center by layering cheese cubes in the middle before shaping the loaf.
  • Want more burger flavor? Add a spoonful of chopped pickles to the meat mixture.
  • No breadcrumbs? Use crushed crackers or panko instead.
  • Storage: Leftovers keep for 3 days in the fridge or can be frozen for up to 3 months.
