Description

This Avocado Bacon and Egg Toast is a hearty, flavorful meal featuring crispy toast, creamy mashed avocado, crispy bacon, and a runny egg. Topped with seasonings and fresh herbs, it’s a perfect way to start your day!


Ingredients

  • 2 slices of bread (sourdough, whole grain, or your favorite)
  • 1 ripe avocado, mashed
  • 2 strips of bacon, cooked and crumbled
  • 2 eggs, cooked to your preference (fried, poached, or scrambled)
  • 1 tbsp butter (for frying, optional)
  • 1/2 tsp salt, or to taste
  • 1/4 tsp black pepper
  • 1/2 tsp red pepper flakes (optional, for heat)
  • 1/2 tsp everything bagel seasoning (optional)
  • 1 tbsp fresh chives or cilantro, chopped (for garnish)
  • Lemon juice, to taste

Instructions

  • Step 1: Cook the Bacon
  • Cook bacon in a skillet over medium heat until crispy, about 5–7 minutes. Drain on a paper towel and crumble.
  • Step 2: Toast the Bread
  • While the bacon cooks, toast the bread until golden and crispy.
  • Step 3: Make the Avocado Mash
  • In a small bowl, mash the avocado with a fork. Add a squeeze of lemon juice, salt, black pepper, and red pepper flakes (if using).
  • Step 4: Cook the Eggs
  • Fry the eggs in the bacon grease or butter over medium heat until desired doneness. (Sunny-side-up, over-easy, or poached all work well.)
  • Step 5: Assemble & Serve
  • Spread mashed avocado evenly over the toasted bread.
  • Top with crispy bacon crumbles and a fried egg.
  • Garnish with chives or cilantro and a sprinkle of everything bagel seasoning.
  • Serve immediately and enjoy!

  • For extra crunch, rub the toast with a garlic clove after toasting.
