- 1 ripe avocado, mashed
- 2 strips of bacon, cooked and crumbled
- 2 eggs, cooked to your preference (fried, poached, or scrambled)
- 1 tbsp butter (for frying, optional)
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper
- 1/2 tsp red pepper flakes (optional, for heat)
- 1/2 tsp everything bagel seasoning (optional)
- 1 tbsp fresh chives or cilantro, chopped (for garnish)
- Lemon juice, to taste
Instructions
- Step 1: Cook the Bacon
- Cook bacon in a skillet over medium heat until crispy, about 5–7 minutes. Drain on a paper towel and crumble.
- Step 2: Toast the Bread
- While the bacon cooks, toast the bread until golden and crispy.
- Step 3: Make the Avocado Mash
- In a small bowl, mash the avocado with a fork. Add a squeeze of lemon juice, salt, black pepper, and red pepper flakes (if using).
- Step 4: Cook the Eggs
- Fry the eggs in the bacon grease or butter over medium heat until desired doneness. (Sunny-side-up, over-easy, or poached all work well.)
- Step 5: Assemble & Serve
- Spread mashed avocado evenly over the toasted bread.
- Top with crispy bacon crumbles and a fried egg.
- Garnish with chives or cilantro and a sprinkle of everything bagel seasoning.
- Serve immediately and enjoy!
