Description

Irish Potato Farls are traditional, soft, and fluffy potato pancakes made from mashed potatoes and a few simple ingredients. These pan-fried delights are a staple in an Irish breakfast and pair perfectly with butter, eggs, or even smoked salmon.

Ingredients

Units Scale
  • 2 cups mashed potatoes (about 1 lb / 450g cooked potatoes)
  • 1/2 cup all-purpose flour (plus extra for dusting)
  • 2 tablespoons butter (melted)
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder (optional, for extra fluffiness)
  • Butter or oil, for frying

Instructions

  • 1. Prepare the Dough
  • If using fresh potatoes, peel, boil, and mash them until smooth. Let cool slightly.
  • In a bowl, mix the mashed potatoes, flour, melted butter, salt, and baking powder until a soft dough forms.
  • 2. Shape the Farls
  • Lightly flour a clean surface and roll the dough into a ½-inch (1 cm) thick circle.
  • Cut into four equal triangles (farls).
  • 3. Cook the Farls
  • Heat a non-stick skillet or griddle over medium heat and add a little butter or oil.
  • Cook each farl for 3-4 minutes per side, until golden brown and slightly crispy.
  • 4. Serve & Enjoy
  • Serve warm with butter, jam, eggs, bacon, or smoked salmon.

Notes

  • Make it Extra Crispy: Fry in a little more butter for a crispier texture.
  • Make-Ahead: Farls can be stored in the fridge for up to 3 days and reheated in a skillet.
  • Gluten-Free Option: Use gluten-free flour instead of all-purpose flour.
