Description

Artichoke bruschetta is a quick and flavorful appetizer made with marinated artichokes, garlic, and Parmesan, all piled on top of toasted baguette slices. It’s a fresh and savory bite that’s perfect for entertaining or as a light snack with a glass of wine!


Ingredients

  • 1 (14 oz) can or jar marinated artichoke hearts, drained and chopped

  • 1/2 cup grated Parmesan cheese

  • 2 cloves garlic, minced

  • 1 tablespoon lemon juice

  • 2 tablespoons olive oil

  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)

  • Salt and black pepper, to taste

  • 1 French baguette, sliced into 1/2-inch rounds

 

  • Optional: extra Parmesan or parsley for garnish


Instructions

  • Preheat oven to 375°F (190°C).

  • Arrange baguette slices on a baking sheet. Lightly brush with olive oil and toast in the oven for 6–8 minutes, or until lightly golden.

  • In a medium bowl, mix chopped artichokes, Parmesan, garlic, lemon juice, olive oil, parsley, salt, and pepper.

  • Spoon the artichoke mixture evenly onto each toasted bread slice.

  • Return to the oven and bake for another 5–7 minutes, until the tops are warm and slightly golden.

 

  • Garnish with extra Parmesan or parsley, if desired. Serve warm.


Notes

  • Add sun-dried tomatoes or chopped olives for extra flavor.

  • For a shortcut, use pre-toasted crostini.

  • You can prepare the topping ahead and assemble just before serving.
