Artichoke bruschetta is a quick and flavorful appetizer made with marinated artichokes, garlic, and Parmesan, all piled on top of toasted baguette slices. It’s a fresh and savory bite that’s perfect for entertaining or as a light snack with a glass of wine!
Ingredients

1 (14 oz) can or jar marinated artichoke hearts, drained and chopped

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon lemon juice

2 tablespoons olive oil

1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)

Salt and black pepper, to taste

1 French baguette, sliced into 1/2-inch rounds

Optional: extra Parmesan or parsley for garnish
Instructions

Preheat oven to 375°F (190°C).

Arrange baguette slices on a baking sheet. Lightly brush with olive oil and toast in the oven for 6–8 minutes, or until lightly golden.

In a medium bowl, mix chopped artichokes, Parmesan, garlic, lemon juice, olive oil, parsley, salt, and pepper.

Spoon the artichoke mixture evenly onto each toasted bread slice.

Return to the oven and bake for another 5–7 minutes, until the tops are warm and slightly golden.

Garnish with extra Parmesan or parsley, if desired. Serve warm.

Add sun-dried tomatoes or chopped olives for extra flavor.

For a shortcut, use pre-toasted crostini.
