Ingredients
Scale
- 1 cup white rice (long-grain or medium-grain)
- 2 cups water
- 1 cinnamon stick
- 4 cups whole milk
- 1 can (14 oz) sweetened condensed milk
- 1 can (12 oz) evaporated milk
- 1/4 cup granulated sugar (adjust to taste)
- 1 tsp vanilla extract
- 1 tsp ground cinnamon (for garnish)
- 1 strip lemon or orange zest (optional)
- 1/2 cup raisins (optional
Instructions
- Cook the Rice: In a medium saucepan, combine rice, water, and the cinnamon stick. Bring to a boil over medium heat, then reduce to low and let it simmer until the rice is tender and the water is mostly absorbed (about 10 minutes). Remove the cinnamon stick.
- Add the Milk: Stir in whole milk, evaporated milk, and sweetened condensed milk. Cook over low heat, stirring frequently to prevent sticking. Simmer for about 20–25 minutes until thick and creamy.
- Sweeten & Flavor: Add sugar, vanilla extract, and citrus zest (if using). Stir well and continue to cook for another 5–10 minutes, adjusting sweetness as needed.
- Optional Add-Ins: If using raisins, stir them in and let them plump up in the warm pudding.
- Serve & Enjoy: Remove from heat and let cool slightly. Sprinkle with ground cinnamon before serving. Serve warm or chilled.
Notes
- For a thicker consistency, simmer longer. If it gets too thick, add more milk.
- Adjust sweetness by adding more or less sugar.
- Use brown sugar or coconut milk for a twist on flavor.
