Description

Arroz con Leche is a creamy and comforting rice pudding made with milk, cinnamon, and sweetened with sugar. It’s a classic dessert enjoyed across Latin America and Spain. This version has a rich, silky texture with a hint of vanilla and citrus zest, making it perfect for a cozy treat!


Ingredients

  • 1 cup white rice (long-grain or medium-grain)
  • 2 cups water
  • 1 cinnamon stick
  • 4 cups whole milk
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 1/4 cup granulated sugar (adjust to taste)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon (for garnish)
  • 1 strip lemon or orange zest (optional)

Instructions

  1. Cook the Rice: In a medium saucepan, combine rice, water, and the cinnamon stick. Bring to a boil over medium heat, then reduce to low and let it simmer until the rice is tender and the water is mostly absorbed (about 10 minutes). Remove the cinnamon stick.
  2. Add the Milk: Stir in whole milk, evaporated milk, and sweetened condensed milk. Cook over low heat, stirring frequently to prevent sticking. Simmer for about 20–25 minutes until thick and creamy.
  3. Sweeten & Flavor: Add sugar, vanilla extract, and citrus zest (if using). Stir well and continue to cook for another 5–10 minutes, adjusting sweetness as needed.
  4. Optional Add-Ins: If using raisins, stir them in and let them plump up in the warm pudding.
  5. Serve & Enjoy: Remove from heat and let cool slightly. Sprinkle with ground cinnamon before serving. Serve warm or chilled.

Notes

  • For a thicker consistency, simmer longer. If it gets too thick, add more milk.
  • Adjust sweetness by adding more or less sugar.

 

  • Use brown sugar or coconut milk for a twist on flavor.
