Description

These Apple Morning Buns are soft, flaky, and filled with a delicious cinnamon-apple filling. They’re a cross between a cinnamon roll and a pastry, perfect for breakfast or brunch. Made with buttery dough and a caramelized apple filling, they pair wonderfully with coffee or tea!


Ingredients

For the Dough:

  • 3 1/2 cups (440g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 2 1/4 tsp (1 packet) active dry yeast
  • 1 tsp salt
  • 3/4 cup (180ml) warm milk (about 110°F)
  • 1/4 cup (60g) unsalted butter, melted
  • 1 large egg

For the Apple Filling:

  • 2 medium apples, peeled, cored, and diced
  • 1/3 cup (70g) brown sugar
  • 1 tsp ground cinnamon
  • 2 tbsp unsalted butter
  • 1/2 tsp vanilla extract
  • 1 tbsp cornstarch

For the Coating:

  • 1/4 cup (50g) granulated sugar
  • 1 tsp ground cinnamon
  • 2 tbsp melted butter

Instructions

Prepare the Dough:

 

In a large bowl, combine flour, sugar, yeast, and salt.

Add warm milk, melted butter, and the egg. Mix until a dough forms.

Knead the dough for about 8-10 minutes until smooth and elastic.

Place in a greased bowl, cover, and let rise for 1-1.5 hours or until doubled in size.

Make the Apple Filling:

 

In a saucepan, melt butter over medium heat. Add apples, brown sugar, cinnamon, and vanilla.

Cook for 5-7 minutes until apples soften. Stir in cornstarch to thicken.

Let the filling cool completely.

Assemble the Buns:

 

Roll out the dough into a 12×18-inch rectangle.

Spread the apple filling evenly over the dough.

Roll up tightly from the long side and slice into 12 equal pieces.

Place the rolls in a greased baking pan, cover, and let rise for 30 minutes.

Bake:

 

Preheat oven to 350°F (175°C).

Bake for 20-25 minutes until golden brown.

Coat the Buns:

 

Mix sugar and cinnamon in a bowl. Brush warm buns with melted butter and roll in cinnamon sugar.

Notes

You can prepare the dough the night before and refrigerate it overnight for an easy morning bake.

Add chopped nuts or raisins for extra texture in the filling.

Best enjoyed fresh but can be reheated in the oven for a few minutes.
