For the Apple Filling:
- 6 cups apples, peeled, cored, and sliced (about 5-6 medium apples)
- 1/4 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 tbsp lemon juice
- 1 tbsp cornstarch
For the Topping:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1 stick (1/2 cup) unsalted butter, cold and cubed
- 1/2 cup milk
- 1 tsp vanilla extract
Instructions
-
Prepare the Apple Filling:
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss until the apples are evenly coated.
- Transfer the apple mixture into a greased 9×9-inch baking dish or similar-sized dish.
-
Make the Topping:
- In a separate bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
- Pour in the milk and vanilla extract and stir until just combined. The dough will be thick.
-
Assemble the Cobbler:
- Drop spoonfuls of the biscuit topping over the apple filling. It’s okay if some of the apples are exposed, as the topping will spread slightly during baking.
- If desired, sprinkle a little extra sugar over the topping for a golden finish.
-
Bake:
- Bake the cobbler in the preheated oven for 40-45 minutes, or until the topping is golden brown and the apples are bubbling.
- Let the cobbler cool for a few minutes before serving.
-
Serve:
- Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream!
Notes
- You can use a mix of tart and sweet apples for more depth of flavor, like Granny Smith and Honeycrisp.
- Add a handful of chopped nuts (like pecans or walnuts) to the topping for added texture.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the microwave or oven.
