Description

These Apple Cider Whoopie Pie Cookies are soft, cake-like cookies infused with spiced apple cider and warm cinnamon. Sandwiched with a rich caramel buttercream filling, they’re the ultimate cozy fall treat! Perfect for enjoying with a cup of tea or hot cider.

  • 1/2 cup brown sugar

  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup reduced apple cider (see notes)
  • 1/4 cup buttermilk
  • For the Caramel Filling:
  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1/4 cup caramel sauce (homemade or store-bought)
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt

Instructions

  • Make the Apple Cider Cookies:
  • Preheat & Prep:
  • Preheat oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.
  • Reduce the Apple Cider:
  • In a small saucepan, simmer 1 cup of apple cider over medium heat until reduced to ½ cup.
  • Let cool completely before using.
  • Mix the Wet Ingredients:
  • In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy.
  • Mix in egg and vanilla extract until smooth.
  • Combine Dry Ingredients:
  • In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  • Mix the Batter:
  • Gradually mix dry ingredients into the wet ingredients, alternating with reduced apple cider and buttermilk until just combined.
  • Scoop & Bake:
  • Drop tablespoon-sized scoops onto the prepared baking sheet, spacing 2 inches apart.
  • Bake for 9–11 minutes, until edges are set and centers are soft.
  • Cool completely before assembling.
  • Make the Caramel Filling:
  • Beat the Butter:
  • In a bowl, beat butter until creamy.
  • Add Sugar & Caramel:
  • Gradually mix in powdered sugar, followed by caramel sauce, vanilla extract, and salt.
  • Beat until smooth and fluffy.
  • Assemble the Whoopie Pies:
  • Pair the Cookies:
  • Match cookies into pairs of similar size.
  • Fill & Sandwich:
  • Pipe or spread caramel filling onto one cookie.
  • Top with another cookie and gently press together.
  • Optional Drizzle:
  • Drizzle with extra caramel sauce or a dusting of powdered sugar for decoration.

  • For extra flavor, add a teaspoon of apple pie spice to the batter.
