This Apple Chicken Skillet is a quick and flavorful one-pan dinner made with juicy chicken breasts, tender apples, onions, and a touch of thyme. It’s a perfect balance of sweet and savory, all cooked in one skillet for easy cleanup and hearty weeknight meals.
Ingredients

4 boneless skinless chicken breasts (or thighs)

1 tablespoon olive oil

1 tablespoon butter

1 small yellow onion, thinly sliced

2 medium apples, thinly sliced (Honeycrisp or Gala work well)

2 cloves garlic, minced

1/2 cup chicken broth

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon fresh thyme (or 1/2 tsp dried)

Optional: a splash of cream for richness or a pinch of cinnamon for warmth
Instructions
Season both sides of the chicken with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook 5–6 minutes per side, or until golden and cooked through. Remove and set aside.
In the same skillet, add butter and sauté onions for 2–3 minutes until they start to soften.
Add sliced apples and cook for another 3–4 minutes, stirring occasionally, until just tender.
Stir in garlic, then add chicken broth, Dijon mustard, apple cider vinegar, and thyme. Simmer for 2–3 minutes.
Return chicken to the skillet and spoon sauce over the top. Simmer everything together for another 2–3 minutes to let the flavors meld.
Serve warm, optionally drizzled with a splash of cream or topped with a pinch of cinnamon.
