Description

These delicious almond butter cookies are made with simple ingredients, have a rich nutty flavor, and are naturally gluten-free.


Ingredients

Units Scale
  • 1 cup almond butter (unsweetened, creamy or crunchy)
  • 1/2 cup coconut sugar (or brown sugar)
  • 1 egg (or flax egg for vegan option)
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt

 

  • 1/4 cup chocolate chips (optional)

Instructions

Preheat the Oven – Set oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Ingredients – In a bowl, stir together almond butter, coconut sugar, egg, vanilla, baking soda, and salt until smooth. Fold in chocolate chips if using.

Shape the Cookies – Scoop 1 tablespoon of dough and roll into balls. Place on the baking sheet and flatten slightly with a fork.

Bake – Bake for 8-10 minutes until the edges are golden but the center is still soft.

Cool & Serve – Let cool for 5 minutes before transferring to a wire rack. Enjoy!


Notes

  • Vegan Option: Replace egg with 1 tablespoon ground flaxseed + 3 tablespoons water (let sit for 5 minutes).
  • Sweetener Options: Substitute coconut sugar with maple syrup or honey.
