This easy one-pan air fryer meal features crispy, seasoned potatoes and juicy sausage with a hint of garlic and herbs. It’s a simple, hearty dinner with minimal prep and maximum flavor!

Ingredients

Scale
  • 12 oz smoked sausage (or chicken sausage), sliced into rounds
  • 1 lb baby potatoes, halved (or russet potatoes, cubed)
  • 1 bell pepper, sliced (any color)
  • 1/2 red onion, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika (smoked or regular)
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Optional Add-Ins:

  • 1/4 teaspoon red pepper flakes (for spice)
  • 1 teaspoon grated Parmesan (for extra flavor)

Instructions

Step 1: Prep the Ingredients

Preheat air fryer to 400°F (200°C).

In a large bowl, toss potatoes, bell peppers, and onions with olive oil, garlic powder, paprika, Italian seasoning, salt, and black pepper.

Add the sliced sausage and toss again to coat.

Step 2: Air Fry the Potatoes & Sausage

Place everything in the air fryer basket in an even layer.

Cook at 400°F for 15-18 minutes, shaking the basket halfway through, until potatoes are golden and crispy.

Step 3: Serve & Enjoy

Sprinkle with Parmesan cheese or red pepper flakes (if using).

Serve hot and enjoy!

Notes

  • For extra crispiness, soak the potatoes in water for 10 minutes before air frying.
  • Storage: Keep leftovers in the fridge for up to 3 days. Reheat in the air fryer at 350°F for 5 minutes.
  • Protein swap: Use chicken, turkey, or plant-based sausage for variety.
