Description

This sweet, crunchy, and buttery Toffee Chex Mix is impossible to stop eating! Made with crispy cereal, pecans, and a rich toffee coating, it’s the perfect snack for holidays, parties, or gifting.


Ingredients

  • 6 cups Rice Chex cereal
  • 2 cups Corn Chex cereal
  • 1 cup pecans (or almonds)
  • 1 cup (2 sticks) unsalted butter
  • 1 cup light brown sugar, packed
  • 1/4 cup light corn syrup
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup mini chocolate chips (optional)

Instructions

Step 1: Prep & Mix

  1. Preheat oven to 250°F (120°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, combine Rice Chex, Corn Chex, and pecans.

Step 2: Make the Toffee Coating

  1. In a saucepan over medium heat, melt the butter, brown sugar, and corn syrup. Stir constantly until the mixture begins to boil.
  2. Boil for 2 minutes, then remove from heat and quickly stir in baking soda, vanilla, and salt. The mixture will bubble up—this is normal!

Step 3: Coat & Bake

  1. Immediately pour the toffee mixture over the cereal and pecans, tossing gently to coat everything evenly.
  2. Spread the coated mix onto the prepared baking sheet in an even layer.
  3. Bake for 45 minutes, stirring every 15 minutes to ensure even coating.

Step 4: Cool & Serve

  1. Remove from oven and let cool completely. If using chocolate chips, sprinkle them over the mix while it’s still slightly warm so they stick.
  2. Break into clusters and enjoy!
