- 6 cups Rice Chex cereal
- 2 cups Corn Chex cereal
- 1 cup pecans (or almonds)
- 1 cup (2 sticks) unsalted butter
- 1 cup light brown sugar, packed
- 1/4 cup light corn syrup
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 cup mini chocolate chips (optional)
Instructions
Step 1: Prep & Mix
- Preheat oven to 250°F (120°C). Line a large baking sheet with parchment paper.
- In a large bowl, combine Rice Chex, Corn Chex, and pecans.
Step 2: Make the Toffee Coating
- In a saucepan over medium heat, melt the butter, brown sugar, and corn syrup. Stir constantly until the mixture begins to boil.
- Boil for 2 minutes, then remove from heat and quickly stir in baking soda, vanilla, and salt. The mixture will bubble up—this is normal!
Step 3: Coat & Bake
- Immediately pour the toffee mixture over the cereal and pecans, tossing gently to coat everything evenly.
- Spread the coated mix onto the prepared baking sheet in an even layer.
- Bake for 45 minutes, stirring every 15 minutes to ensure even coating.
Step 4: Cool & Serve
- Remove from oven and let cool completely. If using chocolate chips, sprinkle them over the mix while it’s still slightly warm so they stick.
- Break into clusters and enjoy!
