Scale
1 pound ground sausage (mild, spicy, or breakfast sausage)
1 (8-ounce) block cream cheese, softened
1 (10-ounce) can Rotel tomatoes & green chilies, undrained
1 cup shredded cheddar cheese
1/2 teaspoon garlic powder (optional, but adds extra flavor!)
Instructions
- Cook the Sausage – In a large skillet over medium heat, cook the sausage, breaking it apart until browned and fully cooked. Drain excess grease if needed.
- Add Cream Cheese & Rotel – Reduce heat to low and stir in the cream cheese and Rotel (with juice). Stir until the cream cheese is fully melted.
- Mix in Cheese – Add the shredded cheddar cheese and stir until melted and combined.
- Serve – Transfer to a serving bowl or slow cooker set to “warm” to keep it hot. Serve with tortilla chips, crackers, or veggies.
Notes
- Make it spicier by using hot Rotel or adding chopped jalapeños.
- For a smoother dip, add ¼ cup of milk to loosen the consistency.
- Slow Cooker Method – Cook the sausage first, then add all ingredients to a slow cooker and heat on LOW for 1–2 hours, stirring occasionally.
- Storage: Store leftovers in the fridge for 3–4 days and reheat in the microwave or on the stovetop.
