These beef enchiladas are incredibly easy to make with just five simple ingredients. They’re cheesy, saucy, and full of flavor—great for a family dinner!

- 1 pound ground beef
- 1 (10-ounce) can red enchilada sauce
- 8 flour tortillas (soft taco size)
- 2 cups shredded Mexican cheese blend
- 1 (4-ounce) can diced green chilies
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a large skillet over medium heat, brown the ground beef, breaking it apart as it cooks. Drain excess grease if needed. Stir in the green chilies and ¼ cup of the enchilada sauce.
- Assemble the enchiladas: Spoon some of the beef mixture onto each tortilla, sprinkle with cheese, then roll them up tightly. Place them seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with the rest of the cheese.
- Bake for 20 minutes, or until the cheese is melted and bubbly.
- Serve warm and enjoy!
Notes
- Want more flavor? Add taco seasoning to the beef while cooking.
- Prefer corn tortillas? Use 10 small corn tortillas instead of flour.
- Toppings: Serve with sour cream, chopped cilantro, or avocado slices.
