Scale
- 8 oz (225 g) dark chocolate, finely chopped
- 1/2 cup heavy cream
- 3 tablespoons amaretto liqueur
- 1 tablespoon unsalted butter, softened (optional for extra creaminess)
- 1/2 cup cocoa powder, finely chopped almonds, or powdered sugar (for rolling)
Instructions
- Place the chopped chocolate in a heatproof bowl.
- In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer (don’t let it boil).
- Pour the hot cream over the chopped chocolate. Let it sit for 2–3 minutes to soften the chocolate.
- Stir gently until the chocolate is completely melted and smooth.
- Add the amaretto liqueur (and butter, if using) and stir until fully incorporated.
- Cover the bowl and refrigerate the mixture for 1–2 hours, or until firm enough to scoop.
- Using a small cookie scoop or spoon, scoop out small portions of the mixture and roll them into balls with your hands.
- Roll each truffle in cocoa powder, chopped almonds, or powdered sugar to coat.
- Store in an airtight container in the refrigerator until ready to serve. Bring to room temperature before enjoying for the best flavor and texture.
Notes
- For an extra crunch, fold in finely chopped almonds before chilling the mixture.
- You can swap amaretto with other liqueurs like Frangelico, Kahlua, or Baileys for different flavor variations.
- Truffles will keep in the fridge for up to 2 weeks or can be frozen for longer storage.
