For the Soup:
- 4 cups chicken broth (low sodium)
- 2 cups water
- 2 cloves garlic, minced
- 1-inch piece ginger, sliced
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1/2 tsp white pepper (optional)
- 2 green onions, chopped
- 1 cup baby bok choy (or spinach), chopped
- 12–15 frozen or fresh wontons
For Garnish:
- Green onions, sliced
- Cilantro, chopped
- Chili oil (optional)
Instructions
- Prepare the Broth – In a medium pot, bring chicken broth and water to a boil. Add garlic, ginger, soy sauce, sesame oil, and white pepper. Let it simmer for 5 minutes to develop flavor.
- Cook the Wontons – Add the wontons to the broth and let them cook according to package instructions, usually 3-5 minutes, or until they float.
- Add Greens – Stir in the bok choy and let it cook for 1-2 minutes until tender.
- Serve – Remove ginger slices if desired. Ladle the soup into bowls, then top with green onions, cilantro, and a drizzle of chili oil if using. Enjoy!
Notes
- Wontons – You can use frozen or fresh wontons. Pork, chicken, or shrimp wontons work well.
- Make it heartier – Add cooked noodles or extra vegetables like mushrooms or carrots.
